Our Story

It all started with Theo and Grace’s love of food.  Having Greek parents, Theo was raised on traditional Greek cuisine.  After relocating to Miami, he was unable to find a Greek restaurant that prepared food that tasted like the dishes he grew up with.  As a result, Theo would visit his family’s hometown in Greece at least once a year and would later take Grace every summer to experience it for herself.  Upon returning, it wasn’t long before they’d miss the cuisine they would leave behind.  So they decided to open Theos Estiatorio!  A place with authentic Greek and Mediterranean food, great ambiance and quality ingredients (fun fact: the olive oil used at the restaurant comes from Theos family’s village in Greece!)  They put their heart into building the restaurant and worked with renowned architect Hugo Mijares to deliver their vision of bringing the Greek Islands to Fort Lauderdale.  Today, Theos Estiatorio is the premier Greek restaurant serving sophisticated Mediterranean food, made from the heart. Inspired by traditional Greek cuisine that treats the senses. Theos Estiatorio is a story of culinary heritage, purity of flavors, and warm hospitality.  

Executive Chef
Peter Spyropoulos

Theos executive chef and partner, Peter Spyropoulos, found his culinary passion at young age growing up in New York. As a teenager he worked in restaurants, but the excitement of the kitchen always appealed to him. At his mother’s insistence, he enrolled and was accepted at the prestigious Culinary Institute of America where he graduated.  It wasn’t long before his talent was noticed, and he was hired to work at some of the most renowned restaurants in New York including Le Cirque and Bouley. 

After establishing his reputation as an experienced chef in French and Greek cuisines, he was hired to be the Executive Chef at Milos and later at several other 5-star, Greek restaurants including Avra and Limani.

When Chef Peter was presented with the opportunity to open and become a partner at Theos Estiatorio, he saw it as a chance to show Fort Lauderdale a culinary experience like no other. Theos menu is heavily influenced by Peter’s Greek roots and his love for true Greek and Mediterranean cuisine.
